Assam ships more tea than anywhere else on earth and almost nobody who visits Guwahati ever sees a garden. Amchong is 1,782 acres at Digaru, planted since 1958 and still worked by around five hundred people, turning out something close to a million kilos a year. It is half an hour from the city and it is not a museum - the factory you walk through is the factory that runs.

The day starts in the garden with a basket and the two-leaves-and-a-bud rule, which is harder than the women doing it make it look. Then the factory in the order the leaf travels it - withering, rolling, drying - and a tasting bench where five teas from the same estate are set side by side, which is when the differences stop being marketing. Lunch is three courses at the estate restaurant, much of it out of their own kitchen garden. We hold the slot, send a car and bring you back by mid-afternoon.
